3 ways to cook chicken wings on the grill

As a starter, meal or snack, chicken wings will forever remain a great classic. You can let your imagination run wild to decide how to cook the wings and what flavors you want to give them. Here I offer three varieties that go well with the slightly smoked taste. Whatever the occasion, chicken wings are always a hit, and you don’t have to spend hours in front of the grill to enjoy them. INGREDIENTS

2 kg chicken wings

3 tbsp. vegetable oil

Honey and citrus

1⁄4 cup honey

1 lime, zest and juice

1 lemon, peel only

1 C. garlic, minced

1 C. smoked paprika

1⁄2 tsp. salt

1⁄2 tsp. ground black pepper

BBQ

1 C. brown sugar

1 C. smoked paprika

1⁄2 tsp. chili powder

1⁄2 tsp. onion powder

1⁄2 tsp. garlic powder

1⁄2 tsp. salt

1⁄2 tsp. ground black pepper

1⁄4 tsp. cumin

1⁄2 tsp. ground cinnamon

1⁄4 cup BBQ sauce of your choice

Cajun

1 C. smoked paprika

1⁄2 tsp. onion powder

1⁄2 tsp. garlic powder

1⁄2 tsp. dried oregano

1⁄2 tsp. dried thyme

1⁄2 tsp. salt

1⁄4 tsp. cayenne pepper

Ranch Style Dip

1 cup mayonnaise

1⁄2 cup sour cream

1⁄2 tsp. garlic powder

1⁄2 tsp. onion powder

1 C. dried parsley

2 tbsp. chives, chopped

1 C. dried dill

1⁄2 tsp. lemon juice

Salt and pepper to taste

TECHNICAL

  • Preheat the grill using indirect cooking on medium-high to 375°F. If using a charcoal grill, add a block of soft woods such as apple or cherry. For propane BBQs, use a smoke box with wood chips placed over the heat source.
  • Use a paper towel to pat the wings well before placing them in a bowl and adding vegetable oil. Turn well to coat the wings with the oil. Divide the wings into three equal parts and place them in 3 different bowls.
  • Prepare honey and citrus wings in the first bowl: Season with smoked paprika, salt and pepper. In the other bowl, for the BBQ wings, add all the ingredients except the BBQ sauce and mix well. Finally, for the Cajun wings, add all the ingredients and mix well.
  • Place the wings in indirect cooking and leave them on the grill for 50 minutes, turning them from time to time.
  • Meanwhile, prepare the ranch dressing. Mix all the ingredients in a bowl and refrigerate until serving.
  • To finish cooking, remove the wings from the grill, except for the Cajun wings. Return the wings to 2 clean bowls. For the honey citrus wings, add honey, lime juice, minced garlic, lemon and lime zest and mix well. Add the BBQ sauce to the BBQ wings and mix well. Place the wings back on the grill and cook for a further 5 minutes.
  • Remove from grill and serve with ranch dressing.
