Jean-Luc and Isabelle Dolleans have just sold Le Barriol have just sold the hotel-restaurant Le Barriol to a couple from the Gard who will offer cuisine that combines local produce with Mexican recipes.
They had given themselves two years to sell. They will only have taken four months. Jean-Luc Dolleans and his wife passed on their business. They had arrived in 2003 from Paris. The current president of the Chamber of Commerce and Industry (CCI) of Haute-Loire, originally from Beauceron, was director of the Lido Paris. “We said to ourselves that it was better to have a small home than a big one in other people’s homes.” Guided by friends in the Haute-Loire, they found their happiness with the Barriol, a hotel-restaurant run for four generations by the Barriol family.
A couple of globetrotters
The Dolleans couple thus sold their business to Dominique and Karina Godfroy. Dominique is a native of Montpellier. Karina is originally from Mexico. The new Barriol chef has spent 35 years of his life traveling and working as a cook all over the world: in Mexico, Cuba, Saudi Arabia, Nicaragua.
The couple returned to France in 2016 for their children. Since 2018, they have had a restaurant in Calvisson in the Gard. In search of a new business, they flashed on the Capitoline trade.
The Barriol and the Margaritas
Since May 31, Le Barriol has been open with a menu focused on Mexican specialties. The hotel will remain Le Barriol. The restaurant will become La Margaritas. “It’s a mix between local cuisine and Mexico. The clientele will decide but for the moment, they are curious and let themselves be tempted by our proposals such as the taco al pastor, the barbacoa, the fajitas. We put peppers imported from Mexico but it does not sting.”
Until September, the restaurant is open 7 days a week, lunch and dinner.
