On June 13, 2022, Erwann Baudry received at the abbey of Epau, near Le Mans, the gold medal of the departmental competition “One of the best apprentices in France”. The young man (18) competed in the cold kitchen category.

It rewards personal work and a four-year investment in the kitchen​, says the Fléchois who did his CAP and bac pro apprenticeship at the Au Garde-Manger restaurant in Bazouges-sur-le-Loir.

The kitchen,when I was little, I wanted to do this​, says Erwann. The boy forced the hand of the owners of the Garde Manger a little so that they took him on as an apprentice, but four years later, they do not regret it.

“A great kid”

Erwann is a great kid,” says Isabelle Leturmy, he had a great motivation to become a cook. He never gave up and he had a serious career where he has always evolved, where he has always invested. It is a very good element.

Julien Lagarrigue adds: He is passionate about cooking, he is always looking for new things, always moving forward.

Let’s go back to the “One of the best apprentices in France” competition: I wanted to see what I was capable of. Doing a competition could only enrich me,” says Erwann Baudry.

A starred restaurant as a goal

His boss speaks again: Erwann is a kid with a big heart​. He offered his bosses reproductions in chocolate of the medal gleaned from the departmental competition.

Would this young man be perfect? Well no. The rumor around Bazouges says that in the kitchen he is talkative as a magpie.

The Garde Manger brigade will have to endure their chatter a little longer. Erwann Baudry will continue his career there for at least a year. As an employee now.

And then ? He would like to join Christopher Coutanceau’s starred restaurant in La Rochelle.
