The former cook of Krakatoa Christophe Andrau has opened a restaurant with his sister Delphine in place of the former brasserie Le Cérey, whose name they have chosen to keep but which they have completely revamped

“We have revamped everything, in a seventies spirit with orange tones, I think that will please, explains Stessy Faber. We have concocted a varied beer menu, to choose from, draft (3 euros a Bichette) or bottled, but also imagined delicious cocktails. We work with local producers, such as Brasserie Lalune, Azimut and Saint-Omer for beers and the Moon Harbor Submarine Base distillery for strong alcohol. »

Also suggested are Bordeaux wines of course, which customers can accompany with hot or cold dishes, to share or not. The menu offers plates at 8 euros for snacking with friends: for example, the county crousti from the cheese maker Pierre Rollet, broccoli tempura, a chicken crousti from the Fabre brothers, breeders in Ychoux (40), charcuterie boards and of cheeses (14 and 16 euros), or even a tuna tataki bun, made with brioche bread (12 euros). But there are also hot dishes like a hot dog with homemade sausage knack from Gilles Pécastaing, pig breeder in Pissos (12 euros), or a tacos with pulled pork confit accompanied by crunchy vegetables ( 14 euros) and Fish and chips of wild fish (16 euros). Count around 5 euros for a sweet note. (Moelleux with Valrhona chocolate, brownies, whipped cream and local strawberries).
Looking for staff
But a few days before the opening of Bichette, Stessy Faber specifies that, like other establishments in Gironde, she is still looking for staff to hire, which she confided in our columns on May 31. . “The former director of Familia Alix Thores changes position and becomes director of Bichette, and it is Gilles Beys, recruited two months ago, who is now director of Familia. But we are still looking for people, including five heads of rank, three room clerks and a chef de partie for Bichette”, she laments. The restaurateur takes the opportunity to slip that her hotel on the Beach at l’Herbe (Cap Ferret ), under construction this summer to rehabilitate the rooms in poor condition, will not reopen its doors until June 2023. On the other hand, the eponymous restaurant located on the ground floor will be open to the public this summer 2022.
