A Japanese chef revisits French cuisine
When we push the door open 236 rue de Martainville, where the Alba restaurant was located, a delicious scent of broth penetrates the nostrils. In the kitchen, Takahiro Oikawa fine-tuning his recipes before opening the restaurant.
It is the realization of a dream for this Japanese chef. “He went to a French cooking school in Tokyoworked at the time in several French restaurants there”, explains his wife Anaïs, originally from Pas-de-Calais. “He came to France to improve his technique and work with local products. »
After working in several Parisian kitchens, it was finally in Rouen that the couple decided to settle down. ” That Normandy is rich in interesting local products: beef, cheese, seafood… And Rouen is a very active, very beautiful city. »
Local and seasonal
Au Flaméron will offer a “short that changes quite often” menu based on local and seasonal produce. “We really focus on fresh, local ingredients, with respect for the land and the animals. The boss wants one authentic cuisine and offer his vision of French gastronomy,” continues Anaïs.
At noon, the menu will be 26 eurosin the evening, at 35 euros, including starter, main course, dessert and sweets. “Saturday and Sunday we offer brunches, each time with a Japanese specialty to discover. »
