Covertly, she had spoken of her son, Henry, a cook by trade. Probably undecided at the time, he hadn’t shown any particular wish to continue this family story. For several weeks, the cards have been reshuffled and so here is Henry Vanzetto behind the stove. And the restaurant reopened.

“I replace him behind the bar now to serve the glasses and take care of the bills,” says Danielle Vanzetto. As for his 48-year-old son, who has worked at Loiseau, in good houses in Montreal, Antibes, Paris at La Ferme des Mathurins… even if he adds a few new items to the menu, always cooking calf’s head and others traditional dishes that make the reputation of this establishment.
