  • 115 g butter
  • 240 g all-purpose flour

  • 1.5 g of salt
  • 100 g brown sugar
  • 100 g white sugar
  • 60 ml vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract

The steps:

  1. Preheat your oven to 392°F.
  2. Add milk, water and instant coffee over medium heat.
  3. Mix and bring everything to a boil.
  4. Add the cocoa powder to your saucepan and stir until smooth. Add 90 g chocolate pieces, the butter and stir until melted. Reserve.
  5. Mix flour, baking powder and 1.5 g of salt in a bowl. Reserve.
  6. Once your chocolate mixture has cooled, add the brown sugar, white sugar, vegetable oil, eggs and vanilla extract.
  7. Add a third of your flour mixture to your chocolate mixture until smooth. Add the rest of your flour mixture. Add 30 g chocolate pieces.
  8. Grease or line your muffin tins and fill them 2/3 full and put the rest of the chocolate pieces on top. Bake.
  9. Meanwhile prepare your chocolate ganache. Heat your cream in a saucepan over medium heat. When it starts to boil, take it off the heat and add 45g of melted chocolate and a pinch of salt.
  10. Blend until smooth.
  11. When the muffins are out of the oven, prick them with the end of a piping bag and fill with as much chocolate ganache as you like.
  12. If you don’t have a piping bag, you can fill the muffin by carefully cutting a small piece from the top and pouring the filling into it.
