Dijon. Taco, burrito and pan de muerto on the menu at the Que Gusto Mexican festival!

This is a first edition which should not lack spice. Authentic Mexican cuisine can be discovered at the festival Que Gusto ! from October 31 to November 3 at the Cité de la gastronomy in Dijon. “There are many clichés”

At the helm, Ximena Velasco, who arrived from Mexico in 2007. “It frustrated me to see that there is very little knowledge of Mexican gastronomy in France,” she says. “There are many clichés. Chili con carne, for example, is not available there. It comes more from Texas. To tell you the truth, I tasted it for the first time here,” she laughs.

“In Mexico we celebrate the dead by partying”

To explore authentic flavors, meet the 1eh November at 12.30 with a four-course dinner (€49). “I know it’s a bit difficult date, but in Mexico we celebrate the dead by holding a party in the cemetery to welcome the souls of the people who have left us,” emphasizes Ximena Velasco. A sacrificial altar will be installed in the hall to learn more about this ritual.

The state of Chihuahua in the spotlight

On the plate Lydia González, the restaurant’s chef Itacate in Paris, will offer a menu highlighting the Chihuahua region. “It’s a big state in northern Mexico where the burrito was born,” says Ximena Velasco. “A lot of beef is produced there, which is dried to preserve it while the climate is hot and dry. “And unlike the rest of the country, where corn is king, tortillas are made from wheat.

Some workshops are already full

“As a starter there will be a dried stuffed pepper. The chef works on it for days so that it is not spicy,” continues the festival organizer. “I think it will be a great discovery for those who do not know it. »

Ximena Velasco also adds: “The baker from Gourmet Village learned the recipe pan de muerto a round orange blossom brioche eaten only at this time. “Find it at the baker’s The mill.
