Between the municipalities of the North plateau and Rouen, things are moving. In both ways. After the opening of a Petit veau d’or in Bois-Guillaume scheduled for the end of August, it is Quincampoix who arrives on the Place du Vieux-Marché, a few months after the installation of the pastry chef Vatelier in a new shop rue des Carmes.
Brimming with experience and cultivating modesty, crazy chef Éric Autin is launching a new challenge. After creating the gastronomic restaurant Rest’Authentique in Quincampoix in 2014, he moved to the tourist heart of Rouen. The essential offers creative, refined cuisine, with local and regional products. No question of resting on its laurels: “I like to question myself. I was already looking to settle in Rouen before the Covid. And despite the difficulties in the restaurant industry, I still have energy. »
An early vocation
It must be said that the chef has someone to take. His father from Bois-Guillaume where the Autin family has its roots (and even a path in his name) was already in the business, that of fine brewing in Paris in the 70s. “I was rocked in this universe and from the age of 14 and a half I started to learn cooking, in pre-apprenticeship then I got my CAP at 17 and a half. » Precocious, he opened his first restaurant at the age of 18 and a half in Mesnières-en-Bray, then a second in Sommery before settling in Quincampoix.
Taste and tailor-made
In Rouen, he designed his Incontournable with taste and made to measure: the decor is warm with comfortable seats where you want to linger at a teak table. It’s all in the details: the filtered water fountain rather than having bottles transported by road, ceramic water glasses, the excellent engraved knives… We already savor before the plate. The products are refined, simple and seasonal: a wild Corsican sea bass in a seaweed rice crust (to share for two) or on the land side a piece of matured beef in a salt crust… As for desserts, the menu includes leave on a sweet note to share with two.
