She is great Josette! And she still has the fishing the famous manager of the less emblematic name Bar du marché de Bayonne: this Saturday noon, the rue des Basques, is red and white! You no longer go to a festayre in the “rue de la Soif” in Bayonne, a mythical place for peñas and therefore for BdM!

Josette Erramoun, 60 years of Fêtes de Bayonne to her credit, gets her hands dirty with son Christian, and all the staff, whose men have worn a superb Hawaiian shirt with the face of… Josette! It is 2:10 p.m. and a team from the “Sud Ouest” Basque Country arrives unexpectedly for lunch and to celebrate the birthday of Arnold, the summer intern, who is 23 today!

The organization of the BdM is regulated like clockwork, as in all the tables of the city, moreover. “This year, things are going well,” confirms Josette! A short quarter of an hour of waiting and the team is gathered on a long table inside, near the kitchen. Josette, with a smile on her lips behind her small glasses, brings the table of dishes. It will be simple, so that it goes faster: it’s escalope with fried cream for everyone, washed down with a Rioja.
