It undoubtedly is The food trend from the moment to Toulouse. Not a week (I hardly exaggerate) without a new opening stamped Japan on the facade. A country that makes you dream of its cuisine as refined as it is subtle.
Ramen is in progress
Among the inevitable dishes: Ramen. Originally of Chinese origin, this magical soup has become a real institution in the Land of the Rising Sun and a recent phenomenon here.
What makes the difference? The noodles, the ingredients (fried pork, bamboo shoot, hard-boiled egg, nori seaweed, etc.) but especially the broth, which needs to take time to simmer well to release all its aromas. My favorite address? Shin Ya Ramen, Compans-Caffarelli district. Tasty and authentic.
Sushi, takoyaki and okonomiyaki…
Craving for sushi? Do me a favor: forget the chains. It is at cloud (35 rue Nicolas Bachelier) to which you must go. Don’t be fooled by the unpretentious facade. The magic is in there. Freshness of fish and controlled cooking of rice. To discover two specialties from the city of Osaka, first go to Ni’shimaia small canteen located near La Daurade that offers delicious takoyaki, ultra-soft dough balls, usually filled with squid.
Well hidden in the city center, JUGUEM (6 bis rue Baour Lormian) will introduce you to okonomiyaki. An impressive egg and cabbage pancake, accompanied by meat, brushed with sauces and topped with shavings of dried bonito, which wiggle in the heat.
Good lunch specials
For a successful lunch break, head to the Saint-Cyprien covered market, which contains a little Japanese gem: Tchaco Deli from chef Hisako. Very special mention for its excellent bento (small compartmentalized meal tray consisting of rice, marinated vegetables, with a choice of salmon, meat or vegetarian options) and its hearty donburi (breaded chicken, rice and egg).
Other good lunch tips: the always impeccable restaurant Iori in Les Carmes, which offers a Ramen + side dish (gyoza or chicken karaage) for only €14.50, or Solaneko, a discreet tea room in Saint-Cyprien with very delicate dishes (sardine kabayaki, chicken fritters with ginger, tofu pancakes with shiitakes ).
And because you always have to finish with something sweet, from the Japanese cheesecake Takumi (place Wilson) is undoubtedly the lucky one. Of apparent simplicity. And yet… A real cloud in the mouth!
