Cyril Lignac revisits the French toast of our childhood and signs a gourmet and inexpensive festive dessert

Looking for a generous and inexpensive dessert for New Year’s Eve? Cyril Lignac has the perfect recipe: French toast with pears and hazelnut caramel. Easy to make and above all delicious, it will appeal to both young and old.

Here is the recipe for French toast with pears and hazelnut caramel, by Cyril Lignac (Everything in the kitchen, holiday menuof 19 December 2022):

French toast with pears, hazelnut caramel
Preparation time: 10 minutes

Ingredients for 4 people:
For French toast:

  • 4 slices of brioche 2 cm thick
  • 12 cl whole milk
  • 1 egg
  • 30 g half-salted butter
  • 20 g icing sugar
  • 2 pears in syrup

For hazelnut caramel:

  • 80 g icing sugar
  • 160 g of liquid cream
  • 50 g crushed and roasted hazelnuts
  • 4 scoops of vanilla ice cream

Heat the liquid cream in a saucepan and set aside.
Pour the sugar into another pan, let it melt to obtain a light caramel. From the heat, pour in the hot liquid cream. Mix and leave to heat. Form a coating caramel sauce, add the hazelnuts. Let in addition.
Dice the pears and place them in a saucepan with their syrup. Heat and keep warm until serving.
Pour the milk into a deep plate and mix with the beaten egg. Dip the brioche slices into the milk-egg mixture, only once.
Heat up a frying pan, add the butter, let it brown a little. Place the slices of brioche, sprinkle with sugar. Turn them over and sprinkle with sugar again. They should be well caramelized.
Place the slices of French toast on plates, place the well-drained pears in syrup and a spoonful of caramel on top. Finish with a scoop of vanilla ice cream.
