Fontainebleau. The French pizza champion opens his own restaurant

“Grazie, ciao”! The Italian atmosphere has already been in full swing since May 20, opening day Chez Demeboulevard Magenta, just opposite the main courtyard of the Château de Fontainebleau. The smell of pizzas being baked, visible to customers is spreading throughout the restaurant he has refurbished. The “dream of having his own restaurant” finally comes true for Démétrio Lavilla.

Assets to promote

Pizzerias, in Fontainebleau, that’s not what’s missing. The competition is strong but it does not scare Démétrio Lavilla. Champion of France in 2019 in the large category, 17th out of more than 400 candidates in the classic category, he is one of the young pizza talents. And the restaurants, he knows them very well. He himself was an employee of the Trattoria before the arrival of Covid-19, Démétrio Lavilla already has a clientele because “people appreciated my work there, he stipulates. My work is qualitative. Our products are fresh, we make our own pasta”.

And he will be able to count on a unique location, a little further from the city center, but enjoyinga panorama of the Château de Fontainebleau, a monument that he obviously wanted to highlight: “I installed windows in my restaurant so that we can see the castle in reflection”. Everything is in the detail, just like its originality, that of giving consumers the choice of pizza dough (classic, cereals, gluten-free and chia with seeds).

Originally from Calabria, Démétrio left Italy to come and work in France. “I wanted to learn something else, I was in a routine and I needed to prove certain things to myself,” he comments. After a stint on the Île de Ré, he settled in Fontainebleau.

Today “my life is here,” he says. People know each other, it’s a family town, like a small village”, an atmosphere that Démétrio particularly likes. Very recently, he offered his services at home, mainly in Paris, cooking for people who wanted to taste his recipes (pasta, freshly cut mozzarella, etc.). “The profession of pizza maker is more highly regarded in France than in Italy,” he says. Démétrio now hopes to establish himself as a must, especially with the Bellifontains. He relies in particular on innovative dishes such as his pistachio dessert, which is in great demand, and the Italian atmosphere created by his team. “Welcome to Italy,” he concluded jokingly.
