In the Caen markets, Dan and Hua ravioli are transported directly to China

The yellow cover of Happy Chicken Ravioli food truck draws the eye the market at Place Saint-Sauveur in Caen (Calvados), Friday morning.

Dan and Hua, two friends from China, cook there in good spirits.

Since July 2024, they have been installed at the Friday morning market in Caen, but they are moving their truck at the port of Caen Sunday morning, at Bayeux on Saturdayhair Ifs near the CESR City’Zen driving school on Tuesday lunchtime and at the new Cityfs shopping area on Thursday lunchtime.

“Ravioli is my specialty”

With a big smile and a lot of pride, Hua explains: “ravioli is my speciality. “That’s why the two friends made it their flagship product. “One day a friend asked me to make ravioli with her so she could freeze them. It takes a lot of time to do a lot by hand, especially when the dough has to be folded. »

So Hua bought a machine that makes making dumpling molds very easy. The idea of offer as many people as possible then arrived. The two friends preferred to go on an adventure with a food truck rather than open a restaurant. “I was an industrial buyer before. I left everything to live my passion. »

Homemade ravioli

And transmit the taste of traditional Chinese recipes to others. Dan and Hua make the dough for the ravioli, but also the filling, very juicy, made of pork, chicken or vegetables. “Dumplings are really the typical food in China. You can find it everywhere and it’s a must-have on Chinese New Year tables,” explains Hua, who left Beijing to arrive in Caen in 2008.

In their food truck they also offer Pekingese noodles “a real specialty from northern China” as well as a Chinese burger made with boiled pork and pepper.

“Make sure people come and taste”

After two months of installation at the various markets and their food truck installed during the Caen fair, Dan and Hua are happy positive feedback. “The most complicated thing is getting people who don’t know us to come and taste what we offer. Usually they go with it or they come back,” smiles Hua.

And to introduce a little more to their country’s specialties, Dan and Hua will set up their food truck Bretteville-l’Orgueilleuse Friday evening and Brouay Thursday evening.
