RICE PUDDING by Laurent Mariotte
For 4 people. Preparation: 10 mins Cooking: 40 mins 1 L whole milk 60 g caster sugar 1 star anise 1 cinnamon stick 150 g round rice
Bring the milk to the boil with the sugar, cinnamon and star anise. Add the rice and simmer over low heat for 40 minutes, stirring regularly. Transfer the rice to a bowl, let cool, then remove the star anise. Serve warm or cold.
