The new owners of Chez Ashton restaurants are thinking big.

Jean-Christophe Lirette and Émily Adam, who acquired the chain four months ago, are considering opening branches outside the Quebec region, but also outside the province.
“Our dream is for Ashton to be truly national. We have requests everywhere in Canada, we have requests in the United States. We believe that the brand is quite strong…”, affirms Ms. Adam.
European countries have also shown interest in the channel.
“We have these dreams and I think we have the ambition of our dreams,” said Mr. Lirette.
But the two young entrepreneurs from Portneuf will focus first on the Quebec region, where new branches will open.
“First, we really want to consolidate the Quebec region. Secondly, get out of the border to really go on a more provincial scale,” explains Jean-Christophe Lirette.
Note that the former owner, Ashton Leblond, opened two restaurants in the Montreal area in the 1980s. They closed shortly after.

The new owners, who also own the Ti-Oui snack bar in Saint-Raymond, want to make the Ashton offer even more accessible, in particular through a delivery service.
“We are analyzing how we are going to do it, but people want delivery. We talk about it a lot, a lot, ”underlines Ms. Adam.
It would also not be impossible to observe a change in the image of restaurants.
“We work with a firm that is specialized (…) We look at market trends. Everything is on the table right now,” says Mr. Lirette.
But there is absolutely no question of changing the poutine recipe or the menu.
The Chez Ashton chain currently has 23 branches in the Quebec region.
