Reverse strawberry pie: the fresh and gourmet recipe for sunny days, which must be tried!

To get the recipe off to a good start, here is the ingredient list for four people:
Pie base:
Brick slab: 18 pcs
Clarified butter: 200 g
Castor sugar 80 g
Princess cream:
Milk: 25 cl
Timut pepper: 4 g
Egg yolk: 2 pcs
Sugar: 70 g
Corn starch: 25 g
Liquid cream 35% fat: 25 cl
Accompaniment:
Strawberries: 600 g
Strawberry tail coulis:
Strawberry tail: 100 g
Timut pepper: 4 g
Sugar: 100 g
Water: 100 g
Cider vinegar: 1 cl
Basil: 1/4 bunch
Education:
Castor sugar: 40g
Basil: 1/4 bunch
Edible flower: QS
Stem the strawberries, keeping the stems for the syrup.
Cut half into brunoise and the other half into 4.
- 2/ Strawberry tail syrup:
Combine the strawberry stems, Timut pepper, sugar and water in a saucepan.
Bring the mixture to the boil and simmer for 10 minutes.
Strain the mixture and let it cool.
In a blender, mix the strawberries cut into 4, the syrup, basil and vinegar.
Mix everything together.
Book cool.
Preheat the oven to 180°C.
Cut the sheets of brick dough into slices the size of pie tins, brush them with clarified butter on both sides, stack them in 3, place them in the pie tins.
Sprinkle them with icing sugar and top with another shape on top.
Place them on a baking tray lined with baking paper.
Bake at 180°C for 15 minutes.
Let cool
Heat the milk with grated Timut pepper in a pan.
At the same time, blanch the sugar and egg yolks in a salad bowl, then add the cornstarch.
Pour the hot milk over the blanched mixture, whisk well and return to the pan.
Bring to the boil while continuing to whisk for 1 minute.
Transfer to a salad bowl and leave to cool. Whip the liquid cream, add it to the cooled pastry cream.
Make a spiral of cream with a piping bag at the bottom of the plate.
Place strawberry brunoise on top.
Top with an inverted pie shell.
Sprinkle with icing sugar.
Garnish with basil leaves and flowers.
Pour the coulis around and serve.
