Simple duck noodles

To celebrate the upcoming Lunar New Year, that of the Water Rabbit, the chefs of Table des Bons Vivants offer you a recipe for duck dumplings, the ideal dish to share with your guests.

Ingredients:

– 350 g dehydrated Chinese noodles

– 350 g varnished duck

– 150 g choi sum

– 1/2 onion

– A clove of garlic

– A sprig of spring onion

– 2 tablespoons light soy sauce

– A tablespoon of oyster sauce

– 2 tablespoons hoisin sauce

– A tablespoon of sesame oil

– 10 cl of water

– Pepper

Cut the choi sum into 3 cm pieces, thinly slice half the onion, cut the spring onions into rings and chop the garlic. Slice the lacquered duck.

Prepare the cooking sauce by mixing water, oyster sauce, hoisin sauce, light soy sauce and pepper.

Cook the pasta for 7 minutes in boiling water. Drain, rinse well with cold water and set aside.

Put 3 tablespoons of oil in a frying pan over a high heat, sauté the minced garlic and onion for 20 seconds, add the choi sum and the lacquered duck, cook for a minute, then add the noodles and sauce. Mix well for 4 minutes. Finish with the spring onion slices and sesame oil.
